This healthy one-dish dinner comes together quickly for busy evenings. There’s actually nothing impossible about it beyond its name! One taste and it’s sure to be a family favorite.
I hate cheeseburgers, said nobody ever. When you’re craving the taste of a cheeseburger, but want a healthier option, you can’t go wrong with this recipe. It tastes amazing but has none of the junk ingredients you would end up eating with fast food.
First of all, I’ve incorporated some sourdough. Have you caught the sourdough bug yet? I started getting into sourdough after reading about it on another blog, The Prairie Homestead. If you’re interested, you should check it out if it’s something you want to try. I promise it’s not hard and it’s a great way to get some healthy probiotics into your body. If you do decide to use sourdough in this recipe, it’s important to make sure you get your starter out the night before you make the recipe and feed it with a half cup of flour and a quarter cup of water. That way it’s bubbly and ready to go.
Although this particular recipe does include some sourdough starter, you can make it without and I’ll share those substitutions in my notes. Most importantly, though, all of the ingredients for this recipe can be found easily, don’t cost a fortune, and don’t include any box mixes! It’s the perfect recipe for a weekday evening when you want to get dinner on the table quickly but healthfully.

How I made an “impossible” pie healthier.
The term “impossible pie”, it was a popular back of the baking mix box recipe. I confess that I used to use baking mix in the past for pancakes. I honestly didn’t think twice. If it’s on a grocery store shelf, it really can’t be that bad is how I rationalized back then. However, once I started paying more attention to food labels, I realized it was just as easy to make most recipes primarily from scratch and without worrying about chemical additives in our family’s food.
Sourdough Turkey Cheeseburger Impossible Pie Recipe
You will need the following:
1.5 cups of fed sourdough starter or 1 1/3 cups of flour if you’re not using sourdough plus one cup of milk
3 eggs
3 tablespoons coconut oil, melted
1 teaspoon salt
1 teaspoon dried herbs (I used Italian seasoning)
2 teaspoons baking powder
1 pound of ground turkey
olive oil (to keep turkey and onion from sticking)
1 cup diced onion (optional)
1 teaspoon Worcestershire sauce
1/4 cup ketchup
1/8 cup yellow or Dijon mustard
1/2 cup dill pickles
1/3 cup dill pickle juice
1 cup shredded cheese (I used sharp cheddar)
sesame seeds (optional)
Instructions
- Preheat your oven to 400 degrees Fahrenheit.
- Heat a skillet over medium heat.
- Add ground turkey, onion and a bit of olive oil
- Stir until cooked through.
- Add the pickle juice, followed by the ketchup and mustard and stir thoroughly until well combined.
- While the turkey mixture is cooking on the stove, mix together the sourdough starter, eggs, melted coconut oil, salt, seasoning, and baking powder.
- Spread the turkey mixture into a coconut oil greased pie pan.
- Top with the sourdough mixture, followed by pickle slices and shredded cheese.
- Sprinkle with sesame seeds, if desired.
- Bake for 30 minutes, cool for 10 minutes and serve.
If you’re not using sourdough starter, replace with 1 1/3 cups all-purpose, unbleached flour and 1 cup of milk.

Notes
I used ground turkey but you could use ground beef instead. If you do, you can omit the olive oil.
